As a native Swiss, I ran one of the best Appenzeller cheese dairies until 2013. Today, Riesling, Burgundy, and Pinot Noir are at the center of my life. Accompanying these exciting varieties not only in the vineyards but in my favorite area, the wine cellar, from fermentation to bottling, offers many magical moments.
